The project was a “smart fermentation tank” which would enhance his wine making skills by monitoring the oxygen levels and the temperature of the wine during the fermentation process. This would help him to determine the metrics which are involved in creating superb wines.

His invention came in handy when the California wildfires of 2017 swept across the property, making it necessary for the crew to abandon the area. He had designed the tanks to be automatically adjusting and they made the necessary changes to the product that was in process and when all was said and done, the smart fermentation tanks had saved Palmaz Vineyards an estimated $10 million by maintaining ideal conditions for massive amounts of juice which were in the process of fermentation.
