He threw himself into a new project that would take him six years to develop. The project was a “smart fermentation tank” which would enhance his wine making skills by monitoring the oxygen levels and the temperature of the wine during the fermentation process. This would help him to determine the metrics which are involved in creating superb wines.

Christian Palmaz is one of the most innovative wine makers in the business today. His invention came in handy when the California wildfires of 2017 swept across the property, making it necessary for the crew to abandon the area. He had designed the tanks to be automatically adjusting and they made the necessary changes to the product that was in process and when all was said and done, the smart fermentation tanks had saved Palmaz Vineyards an estimated $10 million by maintaining ideal conditions for massive amounts of juice which were in the process of fermentation.

Christian Palmaz is the CEO of the Vineyard and he has continued using the talents he possesses to create a program that aids in the simultaneous ripening of all of the grapes within a parcel. In addition, he has created a sorting system that automatically removes all damaged fruit through a unique system of light imaging that detects flaws including wrinkles and flaws, suggesting sunburning of the skin of the grape. The innovations delivered by his steadfast commitment to enhancing and perfecting the craft of wine making, Palmaz has helped to ensure that the wines made at Palmaz Vineyards are of premium and high quality.
